Minnesota Locavores, meet Philia Food’s Savory and Spicy Feta Spreads. (Since the company has been around the farmers’ market scene since 2012 there’s a chance you may have already met my new snack food friend. If so, humor me this time and read all about what I made with it!)

Feta Spread with Bread

I stumbled on these last week at Mississippi Market next to the cream cheese. Here’s how the conversation went:

Me: “Hello…Umm…Excuse me? Hi there. I’m Amy and I…well I couldn’t help but notice you’re wearing the “Discover Local” tag, and…well…I’ve got to be honest, I’ve pretty much tried every local product in this store. But I’m not sure we’ve met…”

Spicy Feta Spread: {Silence}

Me: “So, it says here you’re made in St. Paul. I live in St. Paul too. Wait a second…Philia is like 3 miles from my house. NO WAY! How cool is that?!?!”

Savory Feta Spread: {Silence}

Me: “I’ve got to take you home to meet my husband. He loves feta and I bet he’s going to think you two are the best.” {2 feta spreads get put in the cart.}

What? You don’t have conversations with the stuff in the grocery store? You’re right. Probably not my most enduring quality. At least no one’s ever talked back…

Anyway, take my word for it. If you’re planning a Super Bowl party or a bash for the Opening Ceremonies of the Winter Olympics next month, make sure you add these spreads to the menu. You and your guests will love the unexpected complexity of flavors and how nifty it is that Philia is located right here in St. Paul. I love it on crackers, chips or in pasta, but today I mixed the two spreads up with tomatoes and slow-roasted ham on some crusty french bread from New French Bakery in Minneapolis. DEEEE-Lish.

Feta and Ham Crostini

Savory Feta and Ham Crostini with Philia Feta Spread

Recipe from Minnesota Locavore

Ingredients

1 loaf of crusty french bread
olive oil for drizzling
1 tub Philia Foods Savory Feta Spread (there will be plenty left-over for future stacking; click here to find out where to get your own)
3 oz. cooked and chilled bone-in ham, cut into 1″ pieces

Instructions
1. Preheat oven to 325°F. Slice the french bread into 1/2″ to 1″ slices. Spread into an even layer on an un-greased baking sheet. Drizzle each slice with olive oil. Bake for 5-8 minutes or until crunchy and golden brown.

2. Remove from oven and allow to stand until cool enough to handle. Using a butter knife spread 1 tablespoon of savory feta spread on one side of each slice of french bread.  Top with a ham piece. Serve immediately to prevent bread from becoming soggy.

**for a meat-free option, substitute the savory feta spread for Philia’s spicy feta spread. Instead of ham, top with a slice of roma tomato with the seeds removed.**
