Find it Local Friday: Minnesota Taco Night

This week I’m bringing back Find it Local Friday posts with an update.  When I’m trying to decide what to make, sometimes it’s easier to envision an entire menu rather than how I might stick one ingredient into a dish and fit it with the rest of the meal. Here’s 5 local products that all fit together in to one great Friday night meal:

Minnesota Taco Night

1. Start with taco shells from Tortilleria La Perla, Minneapolis MN. They are family-owned and available at most co-ops and many major retailers in the Metro.

2. Fill them with dried black beans from Whole Grain Milling, Welcome MN. I soak the beans overnight or for 4-6 hours. Drain and cover them with a water in a large pot. Add cumin, cayenne pepper and a little salt. Bring to a boil, reduce heat and simmer until tender, 30-45 minutes.

3. Top with the blue jar…mild/medium salsa from Salsa Lisa, St. Paul, MN.

4. Add the seasonal veggies. Tomatoes and greens are still available at the local farmers’ markets. In late fall and winter, look to La Bore Farm in Fairbault, MN and Living Waters in Wells, MN for hydroponic lettuce and tomatoes.

5. Sprinkle on the cheese. I love feta From Odyssey Feta in Monroe, WI, co-jack from Cady Cheese Factory in Wilson, WI, or all the great cheeses at Crave Brothers in Waterloo, WI.
