    I don’t care what you believe, snow days are a gift of divine intervention. It’s been 2 years since the cosmic weather + traffic + school calendar stars aligned to give me a day off of work for weather. This morning the alarm went off to “the heaviest snow bands are moving over downtown Minneapolis and St. Paul right now.” I sat straight up and fumbled around in the dark to find my phone. Could it be? Could today be the day? I dialed up WCCO and started scrolling down the list. Anoka Hennepin cancelled. Eden Prairie cancelled. Both are big metro districts. That’s a good sign.     I promised earlier this week that I’d been working on some rock-your-socks off recipes to post this week. Today it’s a cranberry apple jam posted on Simple Good and Tasty. Cranberry and apple have been my go-to friends this season.  First the donuts.  Today it’s jam.  You can bet I’ll be making Liz’s crumble top pie too. I love the combination of sweet and tangy with cinnamon swirled in.  It reminds me of the candle section during the holidays.     Cranberry-Apple Donuts

    Here’s what I’ve been up to this week:   The kitchen partner had a birthday and I made the biggest cake I’ve ever attempted. His special request this year: vanilla cake with strawberry filling on the bottom, carrot cake with cream cheese filling in the middle, and poppy seed cake with custard pudding filling on the top layer. By the time it came to candles and cutting the cake I couldn’t even look at the thing. It gave me strong appreciation for the folks who regularly tackle cakes. I don’t have the endurance for it.     The Cranberry Capital

    The kitchen partner and I are unpacking today from a weekend with friends at the Wilderness Resort in Wisconsin Dells. It was nice to put on the swimming suit in chilly October, even if it meant chasing the kitchen partner up and down water slides all weekend. He never gets tired on vacation. I swear. He’s like a five-year-old with a full wallet turned loose at Chucky Cheese. To make up for his “excitement”, on the way home he drove us through Warrens, Wisconsin.
